The story of Velvet Egg Bites
Velvet Egg Bites were what happened when an omelet went to culinary school. They came two to a paper tray, still warm, jiggling slightly when you set them down. Parents bought them on the way to school drop-off, and kids stole the cheesy ones. They tasted like a cloud that had eaten a breakfast sandwich.
Home cooks tried copying them with mason jars and a slow cooker, with very wobbly results.
