The story of Truffle Frites Paddle
Every new food hall had them: skinny fries tossed in truffle oil, parmesan and chopped herbs, served on a wooden paddle with six little cups of aioli. Garlic, sriracha, pesto, smoked paprika and two nobody could identify. They cost three times what fries used to. People ordered them anyway and called the paddle elevated.
Arguments over which aioli was best ended most group dinners, and nobody ever picked the same one twice.
